High Protein Summer Salad
This recipe is the perfect summer salad. It uses fresh, seasonal summer produce. It literally takes 2 minutes to prepare and is perfectly balanced with protein, carbs, and fat. It can be enjoyed as a snack or a side to your meal. Remember, balanced meals/snacks mean balanced blood sugar for happy hormones!
Ingredients:
4-5 cherry tomatoes
1 peach, sliced
2 small to medium beets, sliced
1/2 cup cottage cheese
Drizzle of olive oil
1 tsp white wine vinegar
Salt & pepper
3 basil leaves, sliced
Directions:
Chop tomatoes, beets, and peach into desired shape and size. Drizzle with olive oil, white wine vinegar. Season with salt and pepper and mix to combine.
To assemble: put cottage cheese in a bowl. Top with tomato mix and garnish with chopped basil. Enjoy!
